I went apple picking a few weeks ago and made this apple bread with some left over apples I froze. It was so delicious. check it out!
Apple Bread

Ingredients
Apples:
- 1 tbsp coconut oil
- 3 tbsp coconut sugar
- 2 tbsp coconut milk or any other plant-based milk
- 3 apples cored, peeled and diced
- 1 tsp vanilla extract
- 1 1/2 tsp ground cinnamon
- Pinch of salt
Bread:
- 1/4 cup coconut oil
- 4/5 cup unsweetened coconut milk
- 1 tsp apple cider vinegar
- 6 tbsp maple syrup
- 1 tsp vanilla extract
- 1 1/4 cups ground almonds
- 1 1/4 cups flour
- 2 tsp baking powder
- 1/4 tsp baking soda
Glaze:
- 2 cups powdered sugar
- 2 tsps pure vanilla extract
- 4 tbsp unsweetened coconut milk
Instructions
For the apples:

Heat coconut oil in a pan and add coconut sugar and cook for about a minute until coconut sugar has melted.

Then add the milk, apples, vanilla, cinnamon and salt and cook on a low heat, stirring occasionally, for about 10 minutes.
For the bread:

Preheat oven to 350 degrees. Place the coconut oil in a large bowl and melt.

Once melted, add the milk to the same bowl along with the vinegar, maple syrup, vanilla and ground almonds. Sift in the flour, baking powder and baking soda.

Mix and transfer half of the mixture to a loaf tin lined with greased baking paper

Carefully place the cooked apple mixture on top of the bread mixture in the loaf tin.

Transfer the remaining half of the bread mixture into the loaf tin, making sure the apples are completely covered then use a toothpick or a skewer to swirl through the batter to create a marbled effect

Bake in the oven for 50 minutes, until risen and an inserted skewer comes out clean

Leave to cool on a wire rack.

Combine and whisk ingredients for glaze in a bowl and set aside.

Once cool, poor over the bread and slice and enjoy!
