Traditional fried Bajan bakes typically have three main ingredients – flour, sugar and water. Despite the simple ingredients, they are little pieces of deliciousness! Other ingredients can also be added to make your taste buds dance more and I love to add a little spice (cinnamon and nutmeg) to give it more flavor!

Bajan Fried Bakes

all purpose flour

baking powder

cup
brown sugar

tsp
salt

tsp
cinnamon

tsp
nutmeg

tbsp
vegan butter
softened

cup
warm water

coconut oil for frying

In large bowl mix together flour, baking powder, sugar, cinnamon, nutmeg and salt.

Add vegan butter and work it into the mixture. Slowly add water in a stream, stirring with wooden spoon until the flour starts to leave the sides of the bowl.

Transfer dough to a lightly floured surface. Knead the dough and roll out to cut out circles or roll into balls.

Place the balls/circles into the frying pan or deep fryer and fry until golden brown. Serve while hot.
