Bajan Rock Cakes
Rock cakes are so delicious, dense but yummy. This Bajan version is vegan friendly so give them a try!
BAJAN ROCK CAKES
- 1 cup vegan butter
- 1/2 cup brown sugar
- 1/4 cup apple sauce
- 1/2 cup raisins
- 1 tsp vanilla
- 2 cups flour
Heat oven to 350 degrees. In the bowl of an electric mixer or with a wooden spoon in a mixing bowl, cream butter and sugar until the mixture is smooth.
With the mixer running on low, add the applesauce and the raisins. When incorporated, add vanilla. By hand, using a wooden spoon, stir in the flour, 1/2 cup at a time, to form a dough.
Place on baking sheet and bake for 12 minutes or until slightly golden brown.
