Rock cakes are so delicious, dense but yummy. This Bajan version is vegan friendly so give them a try!

BAJAN ROCK CAKES

Author Vegan Bajan

Ingredients

  • 1 cup vegan butter
  • 1/2 cup brown sugar
  • 1/4 cup apple sauce
  • 1/2 cup raisins
  • 1 tsp vanilla
  • 2 cups flour

Instructions

  1. Heat oven to 350 degrees. In the bowl of an electric mixer or with a wooden spoon in a mixing bowl, cream butter and sugar until the mixture is smooth.
  2. With the mixer running on low, add the applesauce and the raisins. When incorporated, add vanilla. By hand, using a wooden spoon, stir in the flour, 1/2 cup at a time, to form a dough.
  3. Place on baking sheet and bake for 12 minutes or until slightly golden brown.
