Banging Plantains

Spicy plantains with beans and mango mixture to excite your pallet.

Ingredients

  • 2 ripe plantains
  • 1/2 cup red onions diced
  • 1/4 cup scallions diced
  • 1 cup black beans cooked
  • 1/2 cup ripe mango
  • 1 tbsp honey
  • 1 tsp paprika
  • 1/8 tsp cayenne pepper
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 clove garlic diced
  • 1 tsp olive oil
  • 1 tbsp shredded cilantro

Instructions

  1. Heat oven to 375F.

  2. Add olive oil to baking dish. Peel and slice the plantains down the middle and open them up and place in dish.

  3. Mix all remaining ingredients together, excluding honey.

  4. Fill the plantains with the bean mixture then drizzle the honey on top.

  5. Bake for 15 minutes.
