Beets, beets and more beets! Boy do I love some beets! This recipe is one of my favorites because, yes, you guessed it, it’s loaded with beets.

Beet And Chickpea Salad

garlic

olive oil

salt

ground pepper

15 oz can
chick peas, drained

red onion

1/2
medium
lemon juice

tbsp
chopped fresh cilantro

Set beets, garlic on large piece of foil and drizzle olive oil and salt and pepper.

Cook in oven for 40-45 mins. When done remove beets from oven and set aside to cool.

Cut the peeled beets into bite sizes with the minced garlic.

Combine remaining ingredients altogether in a bowl. Season again with olive oil, salt and pepper to taste.
