Beets, beets and more beets! Boy do I love some beets! This recipe is one of my favorites because, yes, you guessed it, it’s loaded with beets.

Beet And Chickpea Salad

Ingredients

  • 3 medium beets
  • 2 cloves garlic
  • 3 tbsp olive oil
  • pinch of salt
  • pinch of ground pepper
  • 1 15 oz can chick peas, drained
  • 1/2 medium red onion
  • 1/2 medium lemon juice
  • 2 tbsp chopped fresh cilantro

Instructions

  1. Set beets, garlic on large piece of foil and drizzle olive oil and salt and pepper.

  2. Cook in oven for 40-45 mins. When done remove beets from oven and set aside to cool.

  3. Cut the peeled beets into bite sizes with the minced garlic. 

  4. Combine remaining ingredients altogether in a bowl. Season again with olive oil, salt and pepper to taste.
