Black eyed pea hummus

Ingredients

  • 1 clove of garlic
  • 5 tbsp olive oil divided
  • Sea salt
  • Freshly ground pepper
  • 1 15- ounce can black-eyed peas rinsed
  • 1 tbsp fresh lemon juice
  • Pinch of cayenne pepper
  • 1 tbsp chopped fresh cilantro
  • 1 tbsp fresh flat-leaf parsley

Instructions

  1. Add all ingredients into a food processor and pulse until a coarse purée forms. With motor running, drizzle in remaining 4 Tbsp. oil.
