Black eyed peas make a great pairing with green beans. Just add some flavor and you can make a great side dish with this combo. Try it sometime!
Black Eyed Peas And Green Bean Salad
- 1 cup green beans trimmed and cut into 1-inch pieces
- 1 tbsp olive oil
- 1 large red onion diced
- 1 cup of black eyed peas
- 1/2 cup shredded carrots
- 1/2 tsp sea salt
- 1/4 tsp chili powder
- 1/4 tsp garlic powder
In a large sauté pan, sweat onions and garlic in olive oil over medium high heat for 5 to 8 minutes. Add green beans and peas cook for a 5 more minutes, then add carrots and mix and cook for 5 more minutes.
Add salt, chili powder and garlic powder and stir to combine. Cook for 2 more minutes and serve immediately.
