As the weather starts to cool down here in Atlanta, I’ve been craving cozy soups. I love this one because its creamy and just bursts with coconut flavor. Check it out below!
CAULIFLOWER SOUP

earth balance butter

onion
finely diced

of cauliflower diced

finely minced fresh parsley

vegetable stock

tbsp
flour

cups
coconut milk

tsp
salt

tsp
ground black pepper

tsp
garlic powder

tsp
fresh thyme

Melt butter in a heavy pot over medium heat, then add the onions and cook until translucent.

Throw in the cauliflower, stir and cook over very low heat for 15 minutes.

Add the parsley and thyme, and then add the vegetable broth and coconut milk and simmer for 10 minutes.

Then whisk in the flour. Cook for a couple of minutes.

Then add salt, garlic powder and pepper. Let simmer for another 20 to 30 minutes. Serve warm.
