I absolutely love avocados and I am always trying to find ways to use them. One day walking down the organic vegan section of the grocery store this product stood out to me called GOAVO. Apparently it is toted as an alternative to mayonnaise for us Vegans. As the base of this item was avocado I thought, why not give it a try. So I paired it with my Chickpea Salad and the rest was history….because I ate it all. It was so delicious. Check it out for yourself using the recipe below!

Chickpea Salad

Ingredients

  • 1 15 oz can of chickpeas
  • 1/4 cup GoAvo
  • 1 tbsp mustard
  • 1/4 cup scallions
  • 1/2 cup celery
  • 1/2 cup carrots
  • 1/8 tsp garlic powder
  • 1/8 tsp cayenne pepper
  • 1/8 tsp black pepper
  • 1/8 tsp sea salt
  • 2 slices vegan white bread toasted

Instructions

  1. Drain and rinse chick peas and place in medium bowl.

  2. Add remaining ingredients and mix and smash together.

  3. Serve on top of the toasted bread and enjoy!
