13 Jul Chocolate Chip Corn Bread
I am a huge fan of corn bread so I am always looking for different ways to make it. Despite the ingredients here, the cornbread is not overly sweet and the mini chocolate chips add a delicious surprise. Give them a try!
Chocolate Chip Corn Bread
- 1 1/4 cups flour
- 3/4 cup cornmeal
- 1/4 cup sugar
- 2 tsp baking powder
- 1/4 tsp sea salt
- 1/2 cup mini semi-sweet chocolate chips
- 1 cup coconut milk
- 1/4 cup coconut oil
- 1/4 cup apple sauce
- nonstick olive oil cooking spray
Preheat oven to 375 degrees. Spray your pan with the nonstick spray.
In a large bowl, whisk flour, cornmeal, sugar, baking powder and salt.
Add coconut milk, coconut oil and apple sauce. Mix together.
Stir in mini chocolate chips.
Transfer to prepared pan and bake for about 20-25 minutes, until tester inserted in center comes out clean. Cool 10 minutes.
