25 Jun Chocolate Chip Protein Pancakes
The pancakes are packed with protein and are great to have on a weekend for breakfast. Although they are delicious on their own, you can add some sprinkles of chocolate chips and maple syrup to top it off!
Chocolate Chip Protein Pancakes
- 3/4 cup gluten-free oat flour
- 3/4 cup gluten-free all-purpose flour
- 1/4 cup rice flour
- 1/3 cup pea protein powder
- 1/4 cup applesauce
- 2 tsp baking powder
- 1/2 tsp sea salt
- 1 1/2 tbsp melted coconut oil
- 1 tsp vanilla extract
- 1 1/2 tbsp maple syrup Grade A
- 1 1/4 cup coconut milk
- 1/2 cup vegan dark or semi-sweet chocolate chips Enjoy Life
Add oat flour, gluten-free flour, rice flour, pea protein powder, baking powder, salt and whisk to combine.
Then add coconut milk, melted coconut oil, vanilla extract, applesauce and maple syrup and whisk to combine.
Add the chocolate chips and gently fold/mix until the batter is well combined. It should be thick but pour-able.
Heat a large nonstick skillet or griddle over medium heat. Spoon 1/4 - 1/3 cup of the batter onto skillet. Cook until surface of pancakes have some bubbles and the edges appear dry and carefully flip pancakes and cook until browned on the underside.
