- 1 cup sugar
- 1/2 cup cinnamon
- 1/2 cup earth balance butter
- 2 cups coconut milk
- 1 tsp apple cider vinegar
- 3 tbsp coconut oil
- 3 tbsp maple syrup
- 2 cups all-purpose flour
- 1/2 tsp salt
- 4 tsps baking powder
- 1 tbsp cornstarch
Preheat your waffle iron.
In a bowl, combine the sugar and cinnamon. Set aside.
Melt the earth balance butter and set aside.
In a large bowl, whisk together the milk, vinegar, coconut oil and maple syrup.
Add the flour, salt, baking powder and cornstarch to the milk mixture and mix until the batter is smooth.
Cook the waffles in your waffle iron. As soon as your waffle is done, dip both sides of it in the melted margarine, then dip both sides of it in the cinnamon mixture.
