Corn and Quinoa Salad

Ingredients

  • 1 15 oz can whole corn
  • 1/4 cup vegan butter melted
  • 1/2 medium red onion
  • 1/4 tsp salt
  • 1 clove garlic minced
  • 1/4 tsp black pepper
  • 1 cup quinoa
  • 1/2 cup carrots diced

Instructions

  1. Put corn in a medium pot, then add water to cover and bring to a boil.
  2. Whisk together vegan butter, salt, scallions and pepper in a large bowl until combined then add to pot.

  3. Wash quinoa, drain and then cook for about 10 minutes.
  4. Add quinoa to the corn pot and stir and add more salt and pepper to taste, if needed.
