This corn chowder is a really great summer soup as it’s easy and light and oh so tasty. Check it out!
- 1 tbsp olive oil
- 1/2 large white onion chopped
- 2 cloves garlic minced
- 4 small red potatoes quartered
- 1/2 tsp sea salt
- 1/2 tsp ground black pepper
- 2 cups of corn
- 2 cups of water
- 2 cups unsweetened coconut milk
- 2-3 green onions chopped
Heat a large saucepan over medium heat, add olive oil, onion, and garlic and sauté for 3-4 minutes.
Add potato, season with salt and pepper, green onions, then add corn and stir for a bit. Then add the coconut milk and water and cook for 15 minutes on reduced low heat. Serve warm.
