Corn Chowder

Author Vegan Bajan

Ingredients

  • 1 tbsp  olive oil
  • 1/2  large white onion chopped
  • cloves  garlic minced
  • small red potatoes quartered
  • 1/2 tsp sea salt
  • 1/2 tsp ground black pepper
  • cups of corn
  • cups  of water
  • cups  unsweetened coconut milk
  • 2-3  green onions chopped

Instructions

  1. Heat a large saucepan over medium heat, add olive oil, onion, and garlic and sauté for 3-4 minutes.
  2. Add potato, season with salt and pepper, green onions, then add corn and stir for a bit. Then add the coconut milk and water and cook for 15 minutes on reduced low heat. Serve warm.
