These bite-sized snacks are just what I need to power up or as a pick me up after a workout session. These balls give me a burst of energy with a healthy dose of fat, fiber and carbohydrates. Not that you can use any nut or seed combination you like in this type of snack. I do alternate options based on what I have on hand, so you can too!

Date Protein Energy Balls

Ingredients

  • 1/2 cup pecans
  • 1/2 cup of almonds
  • 1 tbsp flax seed
  • 1/2 cup shredded unsweetened coconut
  • 2 cups dates pitted
  • 1/2 cup prunes
  • 2 tbsp coconut oil
  • 1/2 tsp sea salt
  • 1 tsp vanilla extract
  • 2 tbsp peanut butter
  • 1 scoop pea protein

Instructions

  1. In a large food processor process the pecans, almonds, dates, prunes, raisins, coconut and flax seed until crumbly.
  2. Add coconut oil, vanilla, peanut butter and sea salt and process again until a sticky, uniform batter is formed.
  3. Add pea protein and blend again. Then scoop the dough by heaping tablespoons, then roll between your hands to form balls.

  4. Chill them in the refrigerator for at least an hour before serving.
