This Pad Thai is incredibly easy to make and is a light noodle dish without the “meat” if you are craving some Thai inspired noodles!
Easy Pad Thai

oz.
dried rice noodles

4
cloves
minced garlic
-
3
tbsp
diced onion
-
2
green onions
sliced
-
1/3
cup
fresh cilantro
-
2
tbsp.
olive oil
-
3
tbsp
soy sauce

Bring a pot of water to boil over high heat. Dunk in rice noodles for 5-6 minutes until noodles are limp but still too firm to eat. Drain and rinse with cold water.

Add 1 to 2 tbsp oil in wok and cook onions and garlic for 2 minutes. Then add the remaining ingredients along with the noodles and stir fry, tossing for 2 minutes adding soy sauce as needed for your taste preference. Serve immediately.
