This Pad Thai is incredibly easy to make and is a light noodle dish without the “meat” if you are craving some Thai inspired noodles!

Easy Pad Thai

  • 8 oz. dried rice noodles
  • 4 cloves minced garlic
  • 3 tbsp diced onion
  • 2 green onions sliced
  • 1/3 cup fresh cilantro
  • 2 tbsp. olive oil
  • 3 tbsp soy sauce


  1. Bring a pot of water to boil over high heat. Dunk in rice noodles for 5-6 minutes until noodles are limp but still too firm to eat. Drain and rinse with cold water.
  2. Add 1 to 2 tbsp oil in wok and cook onions and garlic for 2 minutes. Then add the remaining ingredients along with the noodles and stir fry, tossing for 2 minutes adding soy sauce as needed for your taste preference. Serve immediately.
