14 Jun Easy Pineapple Fried Rice
Pineapples are so delicious right now from the framers market so I figured why not add some to my vegetable fried rice and the result was just so delicious!
Easy Pineapple Fried Rice
- 1 1/2 tbsp olive oil
- 1/2 cup red onion diced
- 3 garlic cloves minced
- 2 teaspoons fresh ginger
- 1 cup carrots diced
- 1/2 cup green beans
- 1/2 cup corn
- 1/2 cup peas
- 1 1/2 cups pineapple cut into 1 inch cubes
- 3 cups sprouted rice
- 1-2 tbsp soy sauce low-sodium/gluten-free
- sea salt
Heat oil in a large pan or wok over medium heat. Add onions and sauté for 3-5 minutes, until softened and lightly browned.
Add garlic, ginger, vegetables and sauté 7-9 minutes, or until tender.
Add pineapple and sauté until slightly browned, about 4-5 minutes
Add soy sauce and rice and add a pinch of sea salt.
Cook about 4-5 minutes, until all ingredients are combined and heated through.
