Pineapples are so delicious right now from the framers market so I figured why not add some to my vegetable fried rice and the result was just so delicious!

Easy Pineapple Fried Rice

Ingredients

  • 1 1/2 tbsp olive oil
  • 1/2 cup red onion diced
  • 3 garlic cloves minced
  • 2 teaspoons fresh ginger
  • 1 cup carrots diced
  • 1/2 cup green beans
  • 1/2 cup corn
  • 1/2 cup peas
  • 1 1/2 cups pineapple cut into 1 inch cubes
  • 3 cups sprouted rice
  • 1-2 tbsp soy sauce low-sodium/gluten-free
  • sea salt

Instructions

  1. Heat oil in a large pan or wok over medium heat. Add onions and sauté for 3-5 minutes, until softened and lightly browned.
  2. Add garlic, ginger, vegetables and sauté 7-9 minutes, or until tender.
  3. Add pineapple and sauté until slightly browned, about 4-5 minutes
  4. Add soy sauce and rice and add a pinch of sea salt.
  5. Cook about 4-5 minutes, until all ingredients are combined and heated through.
