Red Cabbage With Steamed Apples

Ingredients

  • 1 tbsp vegan butter earth balance
  • 1 medium red onion
  • 1 gala or fuji apple sliced peeled and cored
  • 1/2 medium red cabbage
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 3 tbsp red wine vinegar
  • 4 tsp fair trade brown sugar
  • 1/2 cup water

Instructions

  1. In a large pot, melt butter over medium heat.

  2. Add onions and apples to cook- takes about 5 minutes to cook.

  3. Stir in red cabbage and season with salt and pepper.

  4. Add the red wine vinegar, sugar and water and bring to a boil.

  5. Reduce and simmer to cook for about 15-20 minutes.
