Gingerbread for breakfast? Why not? I love anything filled with ginger so I thought why not add some to waffles and make some gingerbread waffles. These fluffy and rich waffles are filled with ginger, molasses and flax for some added protein that makes them so yummy. Try them out!

GINGERBREAD WAFFLES

Ingredients

  • 1 cup spelt flour
  • 1 tbsp ground flaxseed
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 2 tsp ground ginger
  • 4 tbsp coconut sugar
  • 1 cup coconut milk
  • 1 tbsp apple cider vinegar
  • 2 tbsp molasses
  • 11/2 tbsp coconut oil

Instructions

  1. Preheat your waffle iron. Add all of the dry ingredients into a bowl and stir well.
  2. Then add all of the wet ingredients and stir until well combined.
  3. The batter should be a thick dropping consistency.
  4. Pour in your mixture and cook and serve immediately.
