Bajans definitely love ourselves some coconut and that was just what I needed to flavor up my mango, almond yogurt and granola breakfast combo.

Mango Coconut Bowl

These mangoes are sweet and delicious and paired with the coconut and yogurt it's surely a great breakfast treat!

Ingredients

  • 1 large mango
  • 1 cup silk almond yogurt
  • 1 cup granola
  • 1 tsp unsweetened coconut flakes
  • 1 tsp chia seeds

Instructions

  1. Cut mango in half, slicing off the sides and avoiding the pit.

  2.  Slice the mango fresh in diagonal fashion, being careful not to cut through the skin. 

  3. Scoop out the mango in pieces and place in a bowl. Save the outer shell of the mango to use later to fill.

  4. In a bowl, mix together the yogurt, granola, chia, coconut and mango.

  5. Scoop out an even amount of the mixture and place into the outer shell of the mango and top with coconut flakes.
