Who doesn’t love a bread that you can have for breakfast or dessert? Well I know I do, and that’s why this is one of my favorites as it’s not too sweet to have in the morning. It has a hint of the familiar banana taste, with a subtle cornbread flavor. Give it a try, you just might enjoy it!

Maple Corn Meal Banana Bread

Ingredients

  • 1 cup coconut flour
  • 1 cup corn meal
  • 1/3 cup maple syrup
  • 3 ripe bananas
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tbsps unsweetened almond milk
  • 1/3 cup chopped pecans to sprinkle on top

Instructions

  1. Preheat oven to 350F

  2. Add all the ingredients together in a large mixing bowl and mix together.

  3. Line parchment paper in loaf pan and place the mixture in pan.

  4. Bake for 40-45 minutes.

  5. Let it cook before removing from the pan, slice and sprinkle pecans and a drizzle of maple syrup on top.

This dish can be eaten for breakfast or as a dessert!
