Mashed Yams

Ingredients

  • 2 large white yams, chopped and peeled
  • 2 tbsp vegan butter
  • 1 large garlic clove minced
  • 1/2 cup of coconut milk
  • 1/4 tsp sea salt and pepper

Instructions

  1. Bring a large pot of salted water to a boil. Add potatoes and cook until tender, 20 to 30 minutes.
  2. Mash potatoes then add remaining ingredients.
  3. Mash until smooth.
