MUSHROOM POTATO MEDLEY

Ingredients

  • 1 cup mushrooms
  • 1/2 cup red onions
  • 1 tsp minced garlic
  • 1/2 cup brussel sprouts
  • 1/2 cup diced tomatoes
  • 1 tsp coconut oil
  • 1 cup of sliced red cabbage
  • 1 cup diced potatoes
  • 1 cup spinach
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika
  • 1 tsp diced cilantro
  • 1 tsp dried parsley

Instructions

  1. Cook diced potatoes until slightly soft and set aside.
  2. After cooking potatoes, In a skillet heat coconut oil, add onions and garlic until translucent. Add remaining ingredients except spinach and blacken.
  3. Then add potatoes and spinach. serve warm.
