I wasn’t a fan of okras too much growing up, but as I got older it became an acquired taste. Check out this okra salad, it’s quite delicious!

Okra and Chickpea Salad

Ingredients

  • 1 cup sliced okras
  • 1 cup cooked chickpeas
  • 1/2 cup diced tomatoes
  • 1/2 cup diced onion
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/2 tsp minced garlic
  • 1/4 tsp black pepper
  • 1/4 cup olive oil
  • 2 tsp shredded parsley

Instructions

  1. Heat a frying pan with olive oil and add orka and cook for about 5 minutes.
  2. Add the onions, garlic and seasonings and cook until onions are translucent.
  3. Add diced tomatoes and chickpeas.
  4. Serve hot!
