01 May Protein Filled Vegan Burrito
This vegan burrito packs alot of protein, fiber and is filled with deliciousness!
Protein Vegan Burrito
Total Time 20 minutes
- 1/2 cup cooked quinoa
- 1/4 tsp sea salt
- 1 can black beans drained and rinsed
- 1/2 cup frozen corn
- 1 tbsp lemon juice
- 1/4 tsp ground black pepper
- 4 spinach tortillas
- 1 small avocado sliced
- 3/4 cup of meatless crumbles
- 1/4 cup red onions
- 1 tbsp salsa
- 1/4 cup scallions
Cook meatless crumbles with onions until caramelized.
Add sea salt, pepper and quinoa.
Add beans, corn and lemon juice to meatless mixture and cook for 2 minutes.
Warm tortilla then add the meatless mixture in the center, top with salsa and avocado.
Wrap the burrito and slice in half and serve immediately.
