This vegan burrito packs alot of protein, fiber and is filled with deliciousness!

Protein Vegan Burrito

Ingredients

  • 1/2 cup cooked quinoa
  • 1/4 tsp sea salt
  • 1 can black beans drained and rinsed
  • 1/2 cup frozen corn
  • 1 tbsp lemon juice
  • 1/4 tsp ground black pepper
  • 4 spinach tortillas
  • 1 small avocado sliced
  • 3/4 cup of meatless crumbles
  • 1/4 cup red onions
  • 1 tbsp salsa
  • 1/4 cup scallions

Instructions

  1. Cook meatless crumbles with onions until caramelized.
  2. Add sea salt, pepper and quinoa.
  3. Add beans, corn and lemon juice to meatless mixture and cook for 2 minutes.
  4. Warm tortilla then add the meatless mixture in the center, top with salsa and avocado.
  5. Wrap the burrito and slice in half and serve immediately.
