Pumpkin Chocolate Chip Raisin Bread

PUMPKIN CHOCOLATE CHIP RAISIN BREAD

Ingredients

  • 2 flax eggs
  • 1 cup pumpkin puree
  • 1/3 cup maple syrup or agave
  • 1/4 cup brown sugar
  • 3 tbsp coconut oil
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground clove
  • 1/4 tsp sea salt
  • 1/2 cup unsweetened coconut milk
  • 1 cup whole-wheat pastry flour
  • 1/3 cup oat flour
  • 1/4 cup dried raisins
  • 1/4 cup of mini chocolate chips I used enjoy life

Instructions

  1. Preheat the oven to 350 degrees F. Spray a 9x5-inch loaf pan with non-stick spray.
  2. In a large bowl, get flax eggs and add maple syrup or agave, pumpkin puree, brown sugar, coconut oil and stir.
  3. Add baking soda, baking powder, spices, salt and whisk again. Then add coconut milk and whisk again.
  4. Add oat flour and whole wheat flour and stir until just combined.
  5. Then add raisins and chocolate chips and fold until just incorporated.
  6. Pour the batter into the loaf pan and bake until the top is browned and a knife or toothpick inserted into the center comes out clean which is about 50 - 60 minutes.
  7. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
