Pumpkin Fritters

Pumpkin is in season, and I love this time of year. Pumpkin is the order of the day and I made some delicious fritters. Check out the recipe below!

  • 1 cups of coconut flour
  • 1 cup pumpkin puree
  • 3 tbsp of coconut cream
  • 1 cup coconut sugar
  • 1/8 tsp ground cinnamon
  • 1/8 tsp ginger
  • 1/4 cup water if needed
  • oil for frying


  1. Take a mixing bowl, and combine all the ingredients (except the oil ).
  2. Whisk well to make thick consistency batter. Add 1/4 cup of water if batter is too thick.
  3. Heat the oil in a frying pan on medium high heat.
  4. Slowly drop 1 tbsp of batter at a time over medium heat. Drop 6-7 fritters at a time.
  5. Fry the balls until they turn golden brown from all sides.
  6. Remove from heat and sprinkle some powdered sugar on top, or some parsley and serve hot.

    These look unreal!! Wish pumpkin puree was more readily available here!
