Pumpkin is in season, and I love this time of year. Pumpkin is the order of the day and I made some delicious fritters. Check out the recipe below!
PUMPKIN FRITTERS

cups
of coconut flour

cup
pumpkin puree

tbsp
of coconut cream

cup
coconut sugar

1/8
tsp
ground cinnamon

1/8
tsp
ginger

1/4
cup
water if needed

oil for frying

Take a mixing bowl, and combine all the ingredients (except the oil ).

Whisk well to make thick consistency batter. Add 1/4 cup of water if batter is too thick.

Heat the oil in a frying pan on medium high heat.

Slowly drop 1 tbsp of batter at a time over medium heat. Drop 6-7 fritters at a time.

Fry the balls until they turn golden brown from all sides.

Remove from heat and sprinkle some powdered sugar on top, or some parsley and serve hot.
