Heat a large pot and add olive oil, garlic and onion to the pot and cook until garlic and onions are translucent (about 2 minutes), stirring frequently.
Add the diced sweet potatoes, parsley, quinoa, pepper, beans, carrots and thyme.
Cook until potatoes are slightly browned (about 10 minutes), stirring frequently.
Add water and lower heat to a light simmer and cover to cook potatoes and quinoa until potatoes are fork tender (about 15 minutes).
Hey friend there thanks for sharing this particular recipe as we, me and my hubby darling are on diet plan which includes intake of Kale, Quino and such other things. This will add a variety to my menu.
