Quinoa Kale And Sweet Potato Soup
- 2 tbsp olive oil
- 2 cloves garlic minced
- 3 medium sweet potatoes peeled and diced
- 3 tbsp fresh parsley chopped
- 1/4 tsp pepper optional
- 1/2 cup red onions diced
- 1 tbsp dried thyme
- 1/2 tsp sea salt
- 4 cups water
- 1 cup carrots diced
- 1 cup quinoa
- 1 cup kale chopped
- 1/2 cup black beans
Heat a large pot and add olive oil, garlic and onion to the pot and cook until garlic and onions are translucent (about 2 minutes), stirring frequently.
Add the diced sweet potatoes, parsley, quinoa, pepper, beans, carrots and thyme.
Cook until potatoes are slightly browned (about 10 minutes), stirring frequently.
Add water and lower heat to a light simmer and cover to cook potatoes and quinoa until potatoes are fork tender (about 15 minutes).
Add salt and pepper to taste. Serve and enjoy!
