Rainbow Veggie “Tuna” Pasta
This rainbow pasta is filling, delicious, hearty and can serve as good comfort food! Enjoy!
Rainbow Veggie 'Tuna" Pasta
- 2 cups vegetable pasta
- 1 medium onion chopped
- 2 stalks celery chopped
- 10 ounces baby portabella mushrooms sliced
- 4 tbs vegan butter
- 1/4 tsp sea salt
- 1/4 tsp pepper
- 1/4 tsp paprika
- 1 tsp soy sauce
- 1/4 cup flour
- 1 1 ⁄2 cups plain almond milk
- 2 tsp lemon juice
- 1 cup canned chick-peas drained and mashed
- 1/4 cup veganaise
Preheat oven to 350..
Cook vegetable pasta until almost done.
Heat 1 tablespoon vegan butter in a pan. Add onion, celery and mushrooms and saute for a few minutes. When mushrooms give off liquid, add soy sauce. Keep cooking until all vegetables are tender, then add to the pasta.
Stir in the flour, lemon juice and almond milk.
Season with salt, pepper and some paprika. Add the mashed chickpeas and veganaise.
Transfer the mixture to a baking dish. Cover tightly with foil and bake for 15 minutes.
