This combination of food is one of my favorites. The avocados and spice paired with the sweet potatoes makes it so delicious!
Spicy Quinoa Avocado Sweet Potato

of cooked quinoa

sea salt

avocado
diced

diced grape tomatoes

sweet potatoes

Bake the sweet potatoes for 30-45 minutes. combine remaining ingredients in a bowl. Once potato is cooked. cut down the middle and then add the mixture in the bowl to the center. Enjoy!
