11 Jul Spinach Rice Balls
These spinach rice balls are a perfect healthy starter for the day and are absolutely delicious. I tend to eat them either for pre or post workout as you can pop them and go! Check them out!
Spinach Rice Balls
- 1 cup baby spinach leaves
- 1 cup cooked rice
- 1 tbsp lemon juice
- 1 tsp garlic powder
- 1/4 tsp sea salt
- 1/2 cup ground almonds
- 1 cup cooked chickpeas
- 1/2 tsp pepper
- 1/4 cup of coconut oil or olive oil for frying
- 1/2 cup carrots
- 1/2 cup vegan panko
Add all ingredients into a food processor and blend.
Then transfer the mixture into a large bowl. Mix together well until you get a nice dough like texture.
Create roughly 12 balls with your hands.
Heat a frying pan with oil and cook the rice balls until slightly golden brown. If against frying you can also bake them for 20-25 minutes in the oven.
