These spinach rice balls are a perfect healthy starter for the day and are absolutely delicious. I tend to eat them either for pre or post workout as you can pop them and go! Check them out!

Spinach Rice Balls

  • 1 cup baby spinach leaves
  • 1 cup cooked rice
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1/4 tsp sea salt
  • 1/2 cup ground almonds
  • 1 cup cooked chickpeas
  • 1/2 tsp pepper
  • 1/4 cup of coconut oil or olive oil for frying
  • 1/2 cup carrots
  • 1/2 cup vegan panko


  1. Add all ingredients into a food processor and blend.
  2. Then transfer the mixture into a large bowl. Mix together well until you get a nice dough like texture.
  3. Create roughly 12 balls with your hands.
  4. Heat a frying pan with oil and cook the rice balls until slightly golden brown. If against frying you can also bake them for 20-25 minutes in the oven.
  5. Serve hot!
