This salad is such fall yummyness (if that’s even a word) either way, I absolutely love it and it is definitely on my Thanksgiving menu list. You should give it a try!

SQUASH APPLES AND CRANBERRY SALAD

Author Vegan Bajan

Ingredients

  • 1/4 cup melted vegan butter
  • 2 cups of butternut squash cut into 1/2-inch cubes
  • 1 medium apple cubed
  • 1/2 cup dried cranberries
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 tbsp brown sugar

Instructions

  1. Preheat oven to 425 degrees and combine all ingredients in a baking dish. Cover and bake for 30 minutes.
  2. Remove cover and bake an additional 15 minutes or until squash is tender.
  3. Serve immediately.
