Print Sweet Potato Black Bean Salad Author Vegan Bajan Ingredients 2 cups sweet potatoes peeled and diced 1 tbsp olive oil 1/2 tsp ground cumin 1/3 tsp black pepper 1/3 sea salt 2 tbsp lime juice 2 cups cooked black beans 1/2 red onion finely chopped 1/4 tsp of dried parsley Instructions Boil/cook sweet potatoes until tender. Add onions to soften-to slightly cook them. Remove from heat, drain any excess water and season with olive oil, cumin, black pepper and salt. Toss sweet potatoes until evenly coated. Add black beans to sweet potato mix and fold in. Then add the lime juice and parsley. Serve immediately.
