Sweet potato is one of my favorites and I love bruschetta as well. Using sweet potato as toast is just refreshing and delicious, such a great combo, you have to try it out!
Sweet Potato Bruschetta

large tomatoes
chopped

1/2
red onion
chopped

garlic clove
minced

1/4
cup
chopped parsley leaves

1/4
cup
chopped cilantro leaves

tbsp
extra virgin olive oil

1
tbsp
apple cider vinegar

1/2
tsp
sea salt
-
1/2
tsp
freshly ground black pepper

medium sweet potatoes

In a big bowl, mix together all the ingredients, except for sweet potatoes. Set aside.

While the bruschetta marinates, bake sweet potatoes for about 40 minutes, not fulling cooked. Still some stiffness to it, not too soft.

Cut the sweet potato lengthwise into 1/4 inch thick pieces.

Pop the sweet potatoes slices in the toaster until cooked through and a little crispy, about 5 minutes.

Top with spoonfuls of bruschetta, and serve!
