I love coconut, and boy are these pancakes scrumptious! You have to try them yourself!

Toasted Coconut Vegan Pancakes

Ingredients

  • 3/4 cup shredded unsweetened coconut plus more for cooking
  • 1 ½ tsp baking powder
  • 1/2 tsp sea salt
  • 1 cup flour
  • 2 tbsp rolled oats or oat flour
  • 1/2 cup of coconut sugar
  • 1 flax egg
  • 2 tbsp melted coconut oil
  • 1 tbsp maple syrup
  • 1 cup coconut milk

Instructions

  1. Preheat oven to 350 F, and arrange 1/2 shredded coconut on a baking sheet bake for 3 minutes.

  2. In the meantime, prepare flax egg in small mixing bowl. Set aside.
  3. In a large mixing bowl, add heaping 1/2 cup of remaining coconut, baking powder, sea salt, flour, oats and whisk to combine.
  4. To the flax egg, add coconut oil, maple syrup, and coconut milk. Whisk to combine.
  5. Add wet ingredients to mixture and heat skillet to make pancakes. Pour amount int to make small discs. Flip the discs once the bubbles appear throughout. Once cooked sprinkle on a little toasted coconut and maple syrup.
