Vegan Almond Brittle

Sometimes we all have a bit of a sweet-tooth! I used to love brittle when I was a child so once in a while I make a batch of this vegan friendly almond brittle for family and friends. This version is quick and easy to make and taste just as good as the old fashioned peanut brittle. Check it out!

Vegan Almond Brittle

Ingredients

  • 2 cups sugar
  • 3/4 cup Wholesome light corn syrup
  • 1/2 cup water
  • 3/4 cup Earth Balance Butter cut into chunks
  • 2 cups raw almonds cut
  • 1 teaspoon baking soda

Instructions

  1. Butter baking sheet and set aside.
  2. Combine sugar, corn syrup and water in a heavy saucepan. Cook over medium heat, stirring occasionally, 8-12 minutes or until sugar is dissolved and mixture comes to a full boil .
  3. Add vegan butter and continue cooking, stirring occasionally, about 15-25 minutes. Test by dropping a small amount of mixture into ice water to see if it forms a hard but pliable strand.
  4. Stir in almonds and continue cooking, stirring constantly, about 10-12 minutes. Test it by dropping a small amount of mixture into ice water and if it forms a hard brittle strand, remove it from heat and stir in baking soda.
  5. Pour mixture immediately onto prepared sheets and spread evenly to about 1/4-inch thickness.
  6. Cool completely and then break into pieces. Store in container with a tight-fitting lid.
