I love my Bajan roots and from time to time I crave the staples I grew up with and one of them happens to be sweet bread (or some others would call coconut bread). This recipe is my vegan take on the staple, so give it a try and see if you like!
Vegan Sweet Bread

Ingredients
- 2 1/2 cups grated coconut
- 1/3 cup melted butter
- 4 cups flour
- 1 tbsp baking powder
- 1 tsp salt
- 3/4 cup sugar
- 1 cup raisins
- 1/4 cup apple sauce
- 1 1/4 cups coconut milk
- 1 tsp vanilla essence
- 1/4 tsp cinnamon
Instructions

In large mixing bowl add all of the flour, baking powder and salt. Melt the butter and mix the majority of coconut and sugar, leave some (coconut and sugar) back for later. Then add the raisins, applesauce, milk, vanilla essence. Mix well until you have a creamy paste. Add this to the bowl with the flour, baking powder and salt. Mix until you form stiff dough.

Grease a loaf pan. Take the remaining coconut and sugar and add the cinnamon and a little water. Place the dough in the loaf pan and make a hole in the middle and add the coconut sugar mix. Cover up the hole then bake at 375 degrees F for 55 minutes. Let it cool before cutting and serving.

Bake in the centre of the oven for 1 hour. Leave to cool in tins before serving.
