Who doesn’t love waffles? These pumpkin waffles are so yummy! You can enjoy them anytime of day, go try them!
Vegan Pumpkin Waffles

coconut milk

apple cider vinegar

baking powder

ground flaxseed

cinnamon

nutmeg

sea salt

pumpkin puree

cup
melted coconut oil

maple syrup

tsp
pure vanilla extract

Preheat a waffle iron.

In a medium bowl, mix the coconut milk and the apple cider vinegar. Set aside.

In a large bowl, mix the flour, baking powder, flaxseed, cinnamon, nutmeg and salt.

To the medium bowl, add the pumpkin puree, coconut oil, maple syrup and vanilla and whisk together. Pour the wet ingredients into the bowl with the dry ingredients and stir until just combined.

Scoop an appropriate amount of batter onto your waffle iron and cook until the edges are crisp. Serve hot with maple syrup.

Posted at 21:03h, 25 JuneSince it’s pumpkin, they aren’t super crispy, but definitely not soggy. Some folks use organic corn starch to thicken and help with the sogginess of their waffles/moisture, but I prefer to add a bit more coconut flour or add some organic chia seeds if I noticed the texture is not quite exactly where I want it to be on the first batch. Hope that helps some!
