Vegan Pumpkin Waffles

Vegan Pumpkin Waffles

Ingredients

  • cups coconut milk
  • tbsp apple cider vinegar
  • 2 cups flour
  • tsp baking powder
  • 2 tbsp ground flaxseed
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp sea salt
  • 1/2 cup pumpkin puree
  • 1/4 cup melted coconut oil
  • 2 tbsp maple syrup
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat a waffle iron.
  2. In a medium bowl, mix the coconut milk and the apple cider vinegar. Set aside.
  3. In a large bowl, mix the flour, baking powder, flaxseed, cinnamon, nutmeg and salt.
  4. To the medium bowl, add the pumpkin puree, coconut oil, maple syrup and vanilla and whisk together. Pour the wet ingredients into the bowl with the dry ingredients and stir until just combined.
  5. Scoop an appropriate amount of batter onto your waffle iron and cook until the edges are crisp. Serve hot with maple syrup.

    Are these crispy? I just bought a waffle maker and so far, all of my waffles have been soggy 🙁

      Since it’s pumpkin, they aren’t super crispy, but definitely not soggy. Some folks use organic corn starch to thicken and help with the sogginess of their waffles/moisture, but I prefer to add a bit more coconut flour or add some organic chia seeds if I noticed the texture is not quite exactly where I want it to be on the first batch. Hope that helps some!
