I love the combination of spinach and artichoke so I thought why not add it to pasta. This pasta isn’t too creamy but is enough to coat the veggie pasta nicely. It’s such a comforting dish, give it a try!
VEGAN SPINACH ARTICHOKE PASTA

veggie pasta
of your choice

tbsp
vegan butter
-

cloves
garlic minced

1/2
red onion

oz
can artichoke hearts drained
rinsed and cut into bite-sized pieces

1/4
cup
coconut milk
-
1
cup
spinach thawed and drained

1/4
tsp
salt & pepper to taste

water

Cook pasta in water and salt based on instructions.

While pasta is cooking saute garlic and onion in vegan butter.

Add artichokes, spinach and stir to combine.

Add coconut milk and season with salt and pepper.

Serve immediately.
