11 Aug White Bean Zoodle Soup
Soup is great in summer too and this one is so comforting. Give it a try!
White Bean Zoodle Soup
- 1/2 tsp coconut oil
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/4 tsp dried thyme
- 1/4 tsp salt and ground black pepper
- 1 1/2 cups zucchini spirals I used Veggie Noodle Co.
- 1 cup sliced carrots
- 1 tsp cilantro chopped
- 1/2 red onion diced
- 1 tsp garlic minced
- 4 cups water
- 1 cup cannelli beans cooked
Heat coconut oil in a large pot over medium-high heat. Saute onion and garlic in hot oil until just tender, about 5 minutes.
Add water to the pot to boil, then add carrots, beans, basil, oregano, thyme, salt, and pepper.
Bring the to a boil again, then reduce heat to medium and simmer mixture until the vegetables are tender, about 20 minutes. Add zucchini 'noodles' at the end and serve immediately.
