White Bean Zoodle Soup

Ingredients

  • 1/2 tsp coconut oil
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/4 tsp dried thyme
  • 1/4 tsp salt and ground black pepper
  • 1 1/2 cups zucchini spirals I used Veggie Noodle Co.
  • 1 cup sliced carrots
  • 1 tsp cilantro chopped
  • 1/2 red onion diced
  • 1 tsp garlic minced
  • 4 cups water
  • 1 cup cannelli beans cooked

Instructions

  1. Heat coconut oil in a large pot over medium-high heat. Saute onion and garlic in hot oil until just tender, about 5 minutes.
  2. Add water to the pot to boil, then add carrots, beans, basil, oregano, thyme, salt, and pepper. 

  3. Bring the to a boil again, then reduce heat to medium and simmer mixture until the vegetables are tender, about 20 minutes. Add zucchini 'noodles' at the end and serve immediately.
