CAULIFLOWER SOUP

Ingredients

  • 4 tbsp earth balance butter
  • 1/2 onion finely diced
  • 3 cups of cauliflower diced
  • 2 tbsp finely minced fresh parsley
  • 4 cups vegetable stock
  • 4 tbsp flour
  • 2 cups coconut milk
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1 tsp garlic powder
  • 1 tsp fresh thyme

Instructions

  1. Melt butter in a heavy pot over medium heat, then add the onions and cook until translucent.
  2. Throw in the cauliflower, stir and cook over very low heat for 15 minutes.
  3. Add the parsley and thyme, and then add the vegetable broth and coconut milk and simmer for 10 minutes.

  4. Then whisk in the flour. Cook for a couple of minutes.
  5. Then add salt, garlic powder and pepper. Let simmer for another 20 to 30 minutes. Serve warm.
