POTATO AND VEGAN SAUSAGE SOUP

Ingredients

  • 1/2 cup vegan butter
  • 2 onions diced
  • 3 stalks celery chopped
  • 3 carrots sliced into thin rounds
  • 8 cups water
  • 2 cups of vegetable stock
  • 1 1/2 tsp sea salt
  • 1 1/2 tsp ground black pepper
  • 2 cups diced potatoes
  • 2 cups unsweetened coconut milk
  • 4 vegan sausages sliced

Instructions

  1. Melt butter in a large pot over medium heat then add the onions, celery, and carrots until tender, about 10 minutes.
  2. Add water, vegetable stock, salt and pepper and stir.
  3. Add potatoes and bring soup to a boil and simmer until potatoes are tender.
  4. Add the coconut milk and sausages and stir well. Cook soup until heated through and serve with dried parsley on top.
