Spicy Quinoa Avocado Sweet Potato

Ingredients

  • 1 cup of cooked quinoa
  • 1 cup of black beans
  • 1 cup of corn
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1 tsp cumin
  • 1/2 tsp black pepper
  • 1/2 tsp sea salt
  • 1/2 tsp garlic
  • 1 avocado diced
  • 1/2 cup diced grape tomatoes
  • 1/2 cup diced jalapenos
  • 4 sweet potatoes

Instructions

  1. Bake the sweet potatoes for 30-45 minutes. combine remaining ingredients in a bowl. Once potato is cooked. cut down the middle and then add the mixture in the bowl to the center. Enjoy!
