Author Vegan Bajan


  • 2 cups of coconut oil or you can bake them in replacement
  • 3 avocados peeled pitted and diced
  • 1 to matoes cup diced
  • 1/4 cup red onion finely diced
  • 2 tbsp cilantro chopped
  • 1 clove garlic finely minced
  • 1 tsp lime juice
  • 1/4 tsp salt and pepper to taste
  • 1 package of vegan friendly non egg roll wrappers


  1. If frying, heat coconut oil in large skillet or dutch oven over medium high heat.

  2. In a bowl, mash the avocados, stir in lime juice, cilantro, tomatoes, red onion, garlic and salt and pepper.
  3. Lay out the "egg roll" wrapper in diamond shape and place 2 tbsp avocado mixture in the lower center of an egg roll wrapper. Bring the bottom edge of the wrapper tightly over the filing, fold in the sides, and roll up until the top of the wrapper is reached. Wet fingers in some water and seal edges of egg rolls. Repeat with remaining filling and egg roll wrappers.
  4. The oil should be warm enough where you can start frying them for about 2-3 minutes.
