Purple Mashed Potatoes

  • 1 cup of diced red skinned potatoes
  • 1 cup diced purple potatoes
  • 1 clove garlic diced
  • 1 tsp sea salt
  • 1/2 tsp pepper
  • 2 tsp coconut milk
  • 4 tbsp of vegan butter


  1. Cook potatoes until they are soft when checked with a fork. Remove from heat and mash the potatoes. Add the milk, garlic and vegan butter and mash again until well blended. Add the remaining ingredients and blend again. Enjoy.
