Spicy Red Beans And Rice

Red beans and rice with a kick to it!

Ingredients

  • 1 tbsp olive oil extra virgin
  • 2 large garlic cloves
  • 1 large yellow onion
  • 2 cans red kidney beans
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp cayenne pepper
  • 1 tsp hot sauce
  • 1 cup brown rice
  • 1 tbsp vegan butter
  • 1 tsp scallions
  • 2 cups water

Instructions

  1. Heat olive oil in large saucepan and saute garlic and onions until tender.

  2. Stir in drained kidney beans, salt, pepper, onion powder, cayenne pepper and hot sauce. 

  3. Add the water, butter and rice and stir and return to boil. Cook for about 20 mins or until the rice is done. Let stand for 5 minutes from heat before serving. 

  4. Garnish with green onions (scallions).
